Experts define a balanced diet based on two key elements:
Quantity: The recommended caloric intake for an older person is 1,750-2,500 kcal/day.
Quality: Consumption of carbohydrates, animal and vegetable proteins, fiber and minerals.

Vegetable soup recipe
Ingredients for 2 people:
– 150 grams of already cooked chickpeas
– 2 leeks
– 2 carrots
– one potato
– 1 onion
– 1 liter of chicken broth
– Oil and salt
Preparation of vegetable soup:
Chop the onion and leeks and poach them in a pot.
Add the chicken broth and season to taste (avoid abundant salt).
Then add the potatoes and the carrots cut in squares and boil until the potato is soft.
Finally add the chickpeas and mix for a few minutes.
Recipe for mackerel with vegetables en papillote
Ingredients for 2 people:
– 2 large mackerels
– one red bell pepper
– 1 green bell pepper
– one onion
– Oil, salt and pepper
Preparation of mackerel with vegetables en papillote:
As a previous step, ask the fishmonger to clean the mackerel well and prepare it in loins.
Season the mackerel loins with salt and pepper to taste.
Cut the vegetables in julienne and poach them in a frying pan.
Cut two squares of aluminium foil slightly larger than the loins.
Add part of the vegetables to each of the squares.
Place two loins on each pile of vegetables.
Cover the loins with the rest of the vegetables.
Wrap the pile of mackerel and vegetables with aluminum foil, so that it is in the shape of a small, completely closed package.
Put it in the oven for 8-10 min at 200ºC.
Remove the aluminium foil carefully so as not to get burnt by the steam.
Egg dish recipe
Ingredients for 2 people:
– 2 eggs
– 100 grams of Serrano ham
– 100 grams of peas
– Crushed tomato
– Go out
Preparation of eggs to the plate:
Cook the peas for 15 minutes.
Distribute the crushed tomato in two small earthenware casseroles.
Add the Serrano ham cut into small strips.
Add the peas.
Crack two eggs and put one in each casserole.
Add a pinch of salt.
Put in the oven at 200ºC and bake for 12-15 minutes.
Low-calorie apple custard recipe
Ingredients for 4 people:
3 medium apples
2 eggs
150 ml skimmed milk
80 grams of sugar
1 lemon
1 cinnamon stick
Preparation of low-calorie apple custard
Place the apples in a saucepan cut into slices.
Add the juice of one lemon.
Add two tablespoons of water.
Cook the apples over medium heat until tender.
When they are soft, remove from heat, add 40 grams of sugar and mash with a fork.
Bring the milk to a boil accompanied by half a cinnamon stick and lemon rind.
Prepare the caramel: add 40 grams of sugar in a saucepan with half a glass of water and heat until the caramel is formed.
Pour the caramel in 4 flaneras and let it cool down.
Mix the milk with the apple puree and add 3 beaten eggs.
Spread the mixture in the flaneras.
Bake in the oven at 180ºC for 45 minutes.
